Tried freezing my bread and it actually made my toast better

I always had loafs go stale before I could finish them, so last month I threw a half loaf in the freezer on a whim. Toasted a slice straight from frozen this morning and it came out way crispier on the outside but still soft inside. My buddy who works at a bakery told me freezing stops the starch from recrystallizing which is what makes bread go hard. Anyone else noticed their toast gets better when you freeze the bread first?

That "starch recrystallizing" thing makes sense... my toast has been way better since I started freezing too.
