TIL a simple sauerkraut demo at the farmers market flipped my script on fermentation
I always passed by the fermentation booth thinking it was too much work for busy folks. Then I watched a vendor make sauerkraut in five minutes with just cabbage and salt. Seeing how many people in my town are doing it now got me to try. My first jar is bubbling on the counter, and it's actually fun. That hands-on look at something so ordinary changing around here really won me over.

Honestly, I get where @morganp69 is coming from, but I had the same worry before trying it myself. After seeing that demo, I made my own sauerkraut and it was super simple. Just chopping cabbage, adding salt, and waiting for the bubbles to show up. It feels more like a neat kitchen experiment than hard work. Seeing it change day by day is what makes it fun and easy to stick with.

Watch morganp69 over there, sweating over a jar of cabbage like it's a final exam. Dude, it's salted leaves in a cupboard, not a heart transplant. I messed up my first batch by using iodized salt and it still turned into something I could eat. The bar is on the floor.
