Hot take: My local store started carrying instant ferment packs that worry me

They claim you can make kraut in days without weights or brine. This seems risky for beginners who might not know about mold risks. Should we talk to store managers about better labeling?

Kyle's thumb became a blood sacrifice to the DIY gods. Safety seems like more of a suggestion than a rule with that method. Maybe the real project was a trip to the emergency room all along. What's next, using a chainsaw to open a jar?
