Tried to patch a hole in my drywall and ended up with a crater the size of a dinner plate
Last Saturday I was just trying to fix a small dent from my dog's tail in my living room wall, and I watched the spackle crumble right off because the paper layer peeled. I had to cut out a whole 12-inch square with my utility knife and buy a patch kit for $18. How do you keep compound from bubbling up when you're feathering it out on old walls? lol

Nah, "you're not building a spaceship" is funny but sanding too much on old walls can actually make it worse. If you burn through the paper facing you just created a bigger headache. Better to just do thin coats and let it dry right, then a light sand.

A 12-inch square for a dog tail dent? That sounds like you might have been a little aggressive with the knife there honestly. I've had spackle bubble on old walls before and it's usually because the paint is smooth or there's a little dust in the way, try wiping the area down with a damp rag first and make sure you're not globbing it on too thick. It's just drywall, you're not building a spaceship, you can always sand it down again.
