I used to hate meal prepping on Sundays until I actually timed myself
For like three years I swore Sunday meal prep was a waste of my weekend. I'd see those Instagram posts of people with 50 little containers and think no way am I spending my only day off doing that. Then last month I was broke from too many DoorDash orders and decided to just try it one time with a timer. Chicken, rice, and broccoli took me 47 minutes total and I had lunches for five days. The crazy part is I usually spend 15 minutes each morning just figuring out what to eat anyway so I was already wasting time. I live in Austin so I hit up HEB for a big pack of thighs on sale for like six bucks. Now I kinda look forward to it since I put on a podcast and just zone out. Has anyone else here been stubborn about a thing for years and then found out it's actually fine?

47 minutes though? That's counting the cooking or just the chopping and portioning? I've done the chicken and rice thing too and it takes me like 25 minutes just to get the rice right without it being crunchy. And then you gotta clean the rice cooker and the pan and the cutting board. Your math seems off unless you're eating raw chicken straight out the package. It's meal prep not a big deal either way.

Cook the rice in a covered pot without rinsing it first, way faster.
