The year I stopped buying lunch and started bringing leftovers

Five years ago I was spending $12 a day on lunch near my office in Austin. That worked out to over $260 a month just on sandwiches and tacos. I finally got serious about meal prep after I saw my credit card statement in January 2019. Now I cook double portions on Sunday and pack lunch every day. My monthly eating out budget dropped to $40, and I actually look forward to my own cooking. Has anyone else found that leftovers taste way better than fast food?

You actually LOOK forward to your own cooking? What's your go-to lunch that beats a taco?

My go-to is a chicken and black bean bowl with rice, roasted peppers, and a squeeze of lime. It takes 20 minutes to throw together on Sunday and stays good all week if you keep the wet stuff separate until you eat. Honestly, that beats any $12 taco I ever had.
