A customer in Chicago told me I was over-tightening every single barrel adjuster

He said 'you're chasing your tail, a quarter turn is plenty' and now I check them with a lighter touch. How do you guys gauge cable tension without overdoing it?

Chasing your tail" is right, but a quarter turn is rarely enough. You want to feel a bit of resistance when you start turning the barrel, then stop as soon as the shifting feels crisp. If you go past that, you're already over-tightening.
