Wood chunks vs pellets for my offset, trial lasted 3 weekends
I ran my Oklahoma Joe offset for three Saturdays straight with mesquite chunks first, then switched to pellets and the temp swings were way worse with pellets, like 40 degrees either way. The bark on my brisket was also thinner and less crunchy with the pellets, even though I kept the same fire management routine. Has anyone else found that chunks give you a steadier burn in a cheaper offset, or am I just bad at feeding pellets?

Pellet smokers need babysitting, sounds like user error, not the fuel.
