Why does nobody talk about how pellet grills can't actually smoke meat properly?

I get what you're saying, but I've had some pretty solid smoke rings and bark on mine-even the cheap ones-so I think it's more about knowing your gear than the grill itself.

@blairm35 is right that knowing your gear matters, but the real issue is people treat pellet grills like a shortcut. They expect set and forget to give them competition level smoke without any effort. Three hours of smoke tubes and a different wood blend can get you close, but you'll never get that heavy, dirty smoke flavor a stick burner throws down. It's like using an air fryer for fried chicken versus doing it the old way in a cast iron skillet.

Oh man, you hit the nail right on the head. I have a buddy who runs a nice pellet grill and he'll swear up and down his brisket is as good as anything from a stick burner. And don't get me wrong, it's tasty. But you take a bite side by side with something from an offset and it's night and day. That deep, sooty smoke flavor just isn't there no matter what tubes or pellets you use. @blairm35 is right that knowing your gear helps you get the best possible results from what you have, but the tool itself has limits. It's like he's getting the absolute most out of his grill, and that's great, but you can't cheat physics with smoke density. For me, if I'm craving that old school campfire taste, nothing beats tending a fire for hours. It's more work but that's half the fun.
