Went to that new BBQ spot in Austin and the pitmaster told everyone to eat with their hands
I hit up that place on East 6th last Saturday, the one with the 2am line. Guy running the pit came out mid-shift, saw a table using forks on brisket, and literally walked over and took the forks away. Said if you need silverware, you ain't tasting the smoke right. My buddy was pissed but honestly, the bark did taste better off the bone. Made me wonder if all the fancy plating places are just hiding sloppy cook times. Anyone else run into a pitmaster with strong rules like that?
