Vent: That brisket stall at 165F had me ready to quit last weekend
Used a Fireboard probe and watched my $90 packer brisket sit at 165F for almost 3 hours before I finally wrapped it in butcher paper. Has anyone else found that wrapping earlier saves the bark or am I just impatient lol?

Man I've got 5 Fireboard probes myself and I call bull on wrapping early saving the bark. You gotta let it ride through that stall unwrapped, the bark sets during that time. I've pulled at 165 before wrapping and ended up with this mushy mess on the outside, not worth it. Let it sweat it out for those 3 hours, that's where the magic happens.

Aaron's right, I ruined a brisket wrapping at 165 and the bark never came back.
