That food truck in Austin with the 14 hour brisket

Stopped by a trailer off Lamar last weekend, guy runs a solo operation with two offsets. He said he wraps at 165 with butcher paper and pulls at 203, then rests in a cooler for 3 hours. Best bark I've had outside of Franklin's, but he only does about 40 pounds a day and sells out by 2 PM. Anyone else found a small spot that beats the big names when you catch them on the right day?

My buddy hit that same trailer last month and said the guy's brisket was better than the stuff he waited 3 hours for at Franklin's, but he also got there at 11:30 and it was already almost gone. He still talks about that bark like it was a religious experience.
