Swapped my usual apple wood for pecan on a brisket last weekend
I always use apple for everything but tried pecan on a 15lb packer and the flavor was way deeper, almost nutty and sweet at the same time. The bark came out darker and crunchier too. Anyone else find a wood that totally changed their cook?

Always figured pecan was just for ribs but now I gotta try it on a brisket.

Yo @dakota160, have you tried pecan on a brisket yet? Ngl, I was the same way until last summer when I threw a whole packer on with pecan instead of oak. Honestly, it gave it this sweet, mellow smoke flavor that worked way better than I expected. I ended up using a mix of pecan and hickory and that brisket was gone in like 20 minutes at the cookout.
