Ran into Myron Mixon at a gas station outside Macon
He looked at my smoker in the truck bed and said, 'Son, if you ain't burning wood, you're just heating meat.' Has anyone else had a random run-in that changed their whole approach?

Guess that means my electric smoker is just a fancy oven now, huh?

Actually had the same thought when my pellet smoker died last summer, @davis.diana. Ended up using my regular oven with a pan of wood chips on the bottom rack and a water pan above it. The meat went on the top rack, and I cracked the door open a tiny bit with a wooden spoon. It wasn't perfect, but it got a decent smoke flavor on a pork shoulder.
