PSA: My brisket almost went up in flames at a cook-off in Memphis

I was managing the fire on my offset when a big gust of wind blew embers right onto my paper towel roll. It caught fast, and I had to dump my water pan on it before it spread. Anyone else have a close call with fire safety at an event?

Ever think a fire extinguisher was overkill? I did. Saw a grease fire at a tailgate last year. Changed my mind real fast.

I mean, not to be that person, but just a heads up - water extinguishers are actually bad for grease fires. Learned that the hard way at a buddy's BBQ last summer. The grease just splashes and spreads the fire everywhere. You really need a Class K or at least a dry chemical one for kitchen stuff. But yeah, totally agree on having one around after seeing one of those go wrong.
