I had a grease fire on my offset smoker last summer in Austin
I was cooking a pork shoulder for a family get together. Got distracted talking to my brother in law and didn't notice the temp climbing. Next thing I know flames are shooting out the top. I panicked and shut all the vents which just made it worse. Ended up spraying it with a hose and ruining the meat. Had to order pizza for 12 people. Still don't know if there's a better way to handle that fast. Anyone else ever had a grease fire get out of hand?

Oh man, that pizza order hits close to home. I did the exact same thing with my smoker last summer in Tucson. Was doing a brisket for a neighborhood block party, got into a long story with my neighbor about his new truck, and next thing I know the whole smoker is belching black smoke. I thought shutting the vents would starve the fire but it just made it worse inside. I grabbed the baking soda but it was way too late for that. Ended up dousing it with the garden hose and trashing the whole brisket. Had to run to the store for burgers and hot dogs. What kind of setup are you running now?
