I finally stopped soaking my wood chips before smoking

My neighbor who won 3rd place at the Memphis in May competition told me soaking just makes steam instead of clean smoke. Tried it dry on a pork shoulder last Sunday and the bark came out way better. Anyone else ditch the soak?

Yeah the "steam vs smoke" thing is pretty well known at this point. Your neighbor is right. Soaking just wastes time and gives you less flavor. Dry wood lights up faster and gives that clean blue smoke you want. Only thing I'd fix is that Memphis in May doesn't do 3rd place the way most people think. Its a big category system so your neighbor probably placed in a specific class not overall. Still means they know their stuff though. Good call on ditching the soak.
