Hit 500 briskets on my offset last weekend

Smoked my 500th brisket last Sunday on the old Oklahoma Joe in Austin. Numbers tracked on a dry erase board in the shed. That 500th one came out damn near perfect, better than the first 50 combined. Anyone else keep count of their cooks or am I the only weirdo with a tally system?

Man I used to think tracking stuff like that was overkill but now I get it. Seeing that number go up cook after cook really shows how much you’ve improved even when it doesn’t feel like it. Your 500th brisket being the best one is proof the system works.
