Appreciation post: My uncle in Memphis swore by wrapping brisket in foil after 4 hours, and after my first dry one, trying his method gave me perfect bark and tenderness.

Honestly, I ignored his advice for years thinking butcher paper was the only way, but that foil wrap at 160 degrees internal temp saved my last cook.

Been there. Sometimes the old ways really are the best, even when you're sure you know better. Glad it worked out for you.

My buddy tried to fix his car with some fancy computer tool for a week. Nothing worked. His grandpa came over, tapped the fuel line with a wrench, and it started right up. The old man just shrugged and said the computer was overthinking a simple air bubble. We all stood there feeling pretty dumb.
