Check the dough temperature before you start. If it's too warm, the donuts will spread out and make a mess instead of holding their shape. A cooler dough gives you a lot more control.

My friend Jen tried making donuts last month for her kid's birthday party. She mixed everything together and the dough felt fine to her, but she didn't bother checking the temp. First batch went in the oil and those donuts spread out like pancakes. Looked more like flat patties than donuts. Second batch she threw in the fridge for 20 minutes first and they came out perfect, nice and round. She said she learned that lesson the hard way.

My old oven was a nightmare for cookies. The temperature swing was huge, so every batch was a gamble. Control the basics first, or you're just fixing mistakes.
