Shoutout to my cousin for turning me around on air fryer veggies
I always thought my kids would never eat vegetables from the air fryer because they look dry. My cousin came over and made zucchini sticks with a little oil and parmesan. The kids gobbled them up and asked for more. Now I make a batch every night and it cuts down on dinner fights.

Yeah, zucchini sticks are just the start. I do broccoli with a bit of garlic powder and olive oil, comes out crispy and my kids fight over it. Carrot fries work too, slice them thin and they sweeten up in the air fryer. Even Brussels sprouts cut in half get a nice char without being mushy. The key is not overcrowding the basket so everything crisps evenly. Now I barely use my oven for veggies.

My friend Lisa from Chicago tried air frying Brussels sprouts last week... she cut them in half like you said but dumped the whole bag in at once. They steamed instead of crisping up, came out soggy and bitter. I told her about the overcrowding thing, so she tried again with just a single layer. Night and day difference, she said they were crispy and almost sweet. Now she's hooked and experimenting with carrot fries too. Her kids actually ask for the crispy sprouts now, which is wild.

Air fryers are cool for zucchini, but I've had mixed results with other vegetables. @dakota_butler39 mentioned broccoli, which turns out crispy, but things like cauliflower often get too dry for my taste. My family prefers roasted veggies in the oven because they stay juicier. The air fryer is handy for quick snacks, but it's not my go-to for every veggie. Maybe I need to adjust my cooking times or techniques.
