My grandma in Tucson always sprays her basket and gets perfect crispy fries. Maybe it's the type of oil or how much you're using. Could be you just need a hotter air fryer temperature to counter the extra moisture.

And that's the thing, @richardh44 probably has a point about humidity too, it's wild how different environments change something as simple as cooking spray. It's like every little variable in your kitchen is just waiting to mess with your dinner.
