Had the same problem with a kitchen remodel last fall. Started taking progress photos before paying each invoice. Made them fix the outlet spacing before I handed over the check. You have to catch things before the final payment. A detailed contract with specific brand names helps too, not just "install tile.

That bit about "specific brand names" in the contract is so smart. I used to think a good contractor would just know what quality materials to use, but after my deck project went sideways (they used the cheapest, warpiest wood possible), I learned that lesson the hard way. Now I list everything down to the screw type.
