Visited a roaster in Portland and saw they were using a $15 kitchen scale for dosing instead of a fancy one.

That's actually pretty common lol. A lot of places use basic scales because they're reliable and easy to replace. The fancy ones are for show, but a simple digital scale gets the job done just fine for dosing coffee.

Picked up a basic Jennings scale years ago for around thirty dollars and it's still going strong. Does grams to the tenth and that's all I need for my morning pour over. Faithc17, if you're still looking for something simple, that's the route I'd go - nothing fancy, just reliable and easy to read.
