Stop grinding your beans right when the kettle starts boiling
If you grind before your water is ready, those grounds sit there losing aromatics for a full 60 seconds, and I only figured this out after cupping the same Ethiopian beans side by side and the delayed grind tasted like cardboard compared to the fresh one, so does anyone else wait until the kettle hits temp before they grind?
My Baratza Encore has been sitting on the counter for 3 years and I still do it backwards half the time, but yeah once I started grinding while the kettle is still heating the difference was nuts on my light roasts. Now I just fill the kettle first, hit go, then weigh beans while it climbs. Takes the same amount of time and the cup is way better.
