Spent 3 hours trying to dial in a new roast from a local shop near Detroit
Picked up a bag of Ethiopian beans from this roaster in Ferndale last week, figured it would be an easy morning brew. First pour over tasted like sour grass clippings, so I ground finer. Second cup came out bitter and muddy after 2 minutes of brewing. Took me 8 tries and nearly a whole bag of beans before I realized my water temp was too low, like 10 degrees off. Has anyone else burned through half a bag just chasing a decent cup from a new origin?

Why do you assume the beans are the problem? Sounds like user error to me. Good coffee shouldn't need 8 tries to taste right. You messed up your water temp, that's on you. Ethiopian beans are finicky but not impossible. Maybe stick with medium roasts if you can't handle the learning curve. I dial in new bags in 2 tries max. This post just seems like an excuse for bad technique.
