Rant: I tried the "bloom" step for a month straight and it actually fixed my dull morning brew

So I've been making pour-over coffee for like two years and it always came out okay but never great. Last month I decided to actually time a 30-second bloom with a kitchen timer instead of just winging it. I pour about 50 grams of water first, wait, then do the rest. After 3 weeks of this my coffee tastes way less bitter and I can actually pick out flavor notes. Anybody else have a simple trick they ignored forever that turned out to be legit?

My coworker swore by shaking his grounds before pouring. Game changer for him.
