Question about water temp: I was brewing with boiling water for a whole bag and a guy at the shop in Portland set me straight
I was pouring straight off the boil into my pour over for like 3 weeks and wondering why every cup tasted bitter and flat. Then a barista at a shop in Portland told me to let the kettle sit for 30 seconds first, and the same beans suddenly tasted sweet. Has anyone else ruined a whole bag before figuring out the temp thing?
Did you check the actual temp though? Letting it sit 30 seconds only drops it a little, usually to around 200 or so. Most light roasts actually do well closer to 200-205, so the 30 second thing might not be the whole story.
