Pulled a shot with 30 second rest, tasted completely different

I usually pour espresso straight into the cup and drink it right away. Yesterday I let one sit for 30 seconds before tasting it. The bitterness dropped off a lot and I got this weird berry note that wasn't there before. Has anyone else noticed a big flavor shift just from waiting half a minute?

I've had shots cool down and mellow out before, but a full flavor shift like that usually takes a few minutes, not half a second. Maybe your machine was doing something weird with the first pour, or the cup was cold and shocked the coffee. I gotta try this tomorrow with my morning shot, just to see if I'm missing out on a whole different drink.
