Pro tip: a friend told me my pour over was way too fast

I was making my morning coffee for months thinking a 2 minute total brew time was fine. A buddy who used to be a barista in Portland watched me do it and said, 'You're pouring way too much water at once, it's just channeling straight through.' He showed me his method of smaller, slower pours, aiming for about 3 minutes 30 seconds total. I tried it the next day and the difference was huge, way more flavor came out. Has anyone else had a simple tip completely change their routine?

Wait, isn't 3:30 a bit long for a single cup? I always heard 2:30 to 3 minutes was the sweet spot for most pour overs... going much longer can over-extract and make it bitter. Maybe your grind was a touch too fine with the new pour style?

My buddy Jake had a 4 minute brew last week and said it tasted like burnt grass. He went back to a coarser grind and it fixed everything.
