Overheard my barista say 'cold brew takes too long to make' and I had to bite my tongue

I was waiting for my usual pour over last Thursday at this little spot in Portland when the new barista straight up told the owner that cold brew is a waste of time. She said it ties up space and takes 20 hours for something you could just do with hot water in 5 minutes. I get the efficiency angle but honestly, good cold brew has that smooth, sweet taste you can't get from a quick hot brew. I've been making my own at home for about 2 years now with a $30 mason jar setup. Has anyone else run into baristas who don't see the point of cold brew?

That barista's line about cold brew being "a waste of space" is exactly why I stopped going to cafes for it. I use a 32 ounce mason jar with a mesh filter, let it sit on the counter for 18 hours, then dump it in the fridge. Comes out smooth as hell with zero bitterness. If you try the same setup, just use a coarse grind and room temp water, it's foolproof. She might change her mind if she actually tasted a batch that was done right.
