My barista said my "perfect" pour over was the problem, not the beans
I was at this little shop in Portland last week complaining to the barista about how my home brews always taste muddy no matter what beans I buy. She asked to see my grinder setting and just laughed, said I was grinding way too fine and that's why it tastes like wet cardboard. I'd been messing with water temp and ratios for 6 months trying to fix it, and it was the grind the whole time. Feels dumb but also kind of freeing? Anyone got a cheap grinder that actually does a decent medium coarse without breaking the bank?
