I thought pour-over was just hipster nonsense until I tried it in Portland

I spent years thinking pour-over coffee was just a fancy way to waste time and make weak coffee. Then last month I was in Portland at a shop called Proud Mary and the barista talked me into trying their Ethiopia single origin. The flavor notes were actually real - I tasted blueberry and it wasn't just my imagination. It hit me that these guys aren't pretending, the method actually brings out stuff you can't get from a standard drip machine. Has anyone else had that moment where you totally changed your mind about a brewing method?

I read somewhere that the V60 actually lets more oils through than the Chemex because of the different filter thickness... it makes sense why you'd taste more of those berry notes that way.

I'd recommend a V60 over a Chemex for that clean blueberry note.
