Tired of line cooks who won't taste their own food before it hits the pass

Watched a guy send out a pasta that was so salty it could cure a ham, and he just shrugged when I called him on it. How do you get people to care about seasoning without becoming a babysitter every single night?

Tasting spoons on every station finally stopped that problem for me.

Honestly I kind of see it the other way. If a line cook is sending out food that bad and not tasting it, that's on management for not making it clear that tasting is part of the job from day one. You can't just expect people to care about seasoning if you never taught them what good food tastes like or gave them a clear standard to hit. Most guys I've worked with who pull that salty pasta stunt just need someone to walk them through the seasoning check one time, then they get it. Babysitting feels like a pain but sometimes it's just training that should have happened on their first shift. If they still don't get it after that, yeah, time to let them go.
