TIL a quick brine step makes chicken more tender.

Idk, maybe it's just me but the difference is clear.

Seems like unnecessary extra work for minimal payoff. I've tried it side by side and the texture just gets kinda weird and spongy sometimes. Just season it well and don't overcook it, problem solved.

Ever have that happen with a thinner cut? I get way better flavor sear from doing it, totally worth the extra ten minutes to me.

My last attempt at that method turned a perfectly good steak into a kitchen sponge (I swear I could see the pores). I'm with Brian, I'd rather just focus on not turning dinner into shoe leather.
