Showerthought: I was staging a house in Denver and the realtor said 'people eat with their eyes first' which made me rethink my plating.

A little fresh green herb on top works wonders.

Totally. Read somewhere that the oils in fresh herbs get released right when you chop them, so timing is key. Makes a huge difference compared to dried stuff.

On that "timing is key" point - I've actually found that letting chopped herbs sit for a minute or two before adding them to a dish lets the flavors bloom even more than using them instantly. Ever noticed that difference?
