One sous chef told me my knife handle grip was wrong after 7 years on the line

I was holding the blade like a hammer grip and he showed me how pinching the blade near the heel gives way better control for dicing onions, has anyone else had to unlearn a bad habit that basic?

Wait, hold up. SEVEN YEARS on the line and nobody said anything about your grip? That's insane to me. I've been cooking for like four years and I had the same thing happen when I started, but I thought everyone figured that out in the first month. How did you make it through that many shifts without someone grabbing your hand and showing you the pinch grip? I'm honestly shocked your sous chef waited that long to say something, or that you never noticed your hand cramping up after big onion prep. It's wild how some habits fly under the radar for so long even though they're totally wrong.

Garcia's right though - seven years with a hammer grip is wild to me (I mean, your wrist must have been screaming after heavy prep days, right?). Did you just think all that fatigue and slowness was normal, or did you never really notice the difference until he showed you?
