Update: The coffee shop pivot I almost took, until I saw the health inspection scores
I spent three months planning to leave IT and open a small cafe in Tacoma. Last week I popped into the place I wanted to lease and noticed the health inspection sheet by the register, it had a 72 from two months ago and three repeat violations. I asked the current owner about it and she just shrugged and said 'that's just how it is around here.' That single response killed my whole plan, I realized I didn't want to trade one stressful job for another with worse hours and greasy hood filters. Has anyone else dodged a switch because of one red flag you couldn't ignore?

That 72 isn't great but it ain't a death sentence either, plenty of places fix that in a month. Sounds like you were more scared of the work than the health score.
