Swapped my cast iron for carbon steel after a kitchen fire scare
I used to swear by my old cast iron skillet, the one my grandpa gave me. It was heavy as a brick but I thought it would outlast everything. Then last year I left it on a burner too long and the handle got hot enough to scorch my dish towel. That little fire made me rethink things. I picked up a carbon steel pan from a restaurant supply place for about $40. It heats up way faster and I can actually toss food in it without hurting my wrist. The seasoning is different but it's holding up fine after 8 months of daily eggs and stir fry. Anyone else made the switch away from cast iron for something lighter?

Nah, my cast iron's staying. That weight is part of why it cooks so well.

Actually yeah I used to think the weight thing was overblown too. Like people just wanted an excuse to have heavy pans or whatever. But then I borrowed my buddy's cast iron for a camping trip and cooked a steak in it and holy crap I got it. That weight keeps the heat so steady it's almost cheating. Now I'm sitting here regretting all the times I told people to just get a cheap nonstick. You got me rethinking my whole stance honestly.
