I finally realized my cast iron skillet was way too hot after burning onions to ash in under 90 seconds

I spent 5 years wondering why everything stuck and tasted bitter before my aunt walked in, pointed at my smoking pan, and said you're cooking on high like it's a Teflon pan and that's your whole problem.

Yeah your cheap lodge can handle high heat but most people's burners are pushing way more BTUs than they realize. My gas range on medium is hotter than my old electric stove's max setting.

I had a roommate who used his cast iron for searing steaks on max heat for 10 minutes straight and then complained the pan was ruined. He spent like 30 minutes scrubbing it with soap and steel wool every time. Honestly though burning onions into ash in 90 seconds sounds more like a pan problem than a you problem. My cheap lodge skillet can handle high heat for a minute or two without killing anything.
