Watched a guy break down a whole steer with just a boning knife at the county fair demo

He never touched a saw or cleaver once, and his cuts were cleaner than mine with a bandsaw. Has anyone else ditched power tools for a full breakdown and found it faster in the long run?

Oh, that demo sounds amazing. There's something really satisfying about watching someone who really knows their way around a knife work, isn't there? I tried doing a whole lamb with just a boning knife last fall after watching a similar demo online, and honestly, I was shocked at how much less cleanup there was. My cuts were a little rougher than the guy you saw, but it was way faster not having to drag out and plug in all the power equipment.

You know, it's funny you mention that about the knife work, Susan424. I had a buddy who was a butcher for like 15 years and he could break down a whole pig in under 20 minutes with just one knife, no saws or anything. I tried to follow along once and ended up with a mess of uneven chops and a lot of swearing at my cutting board. There's definitely an art to knowing exactly where the joints are without having to feel around for them.
