Spent $80 on a new boning knife and it's like night and day

I finally replaced my old, dull boning knife that I've had for years. The new one cost about eighty bucks and it's a Victorinox with a fibrox handle. The difference in breaking down a pork shoulder yesterday was huge, it just glided through the seams and silver skin. I didn't realize how much extra force I was using before, my wrist feels way better today. Has anyone else made a recent tool upgrade that made a big difference in your day?

Honestly, it's wild how much a good knife changes the whole feel of cooking. I put off getting a decent chef's knife forever and just hacked at stuff with this cheap block set. The first time I used a proper one, it was like, oh, this is actually supposed to be enjoyable.

There's a bigger thing here about how we get used to fighting with bad gear and just accept it. Almost every hobby or trade I've seen has that one upgrade where you realize you were making things way harder than they needed to be for years. It's like buying a cheap plunger or a bad paintbrush because you don't want to spend the money, but then you end up spending twice the time and effort to get half the result. The price tag stings for a day but the frustration of a bad tool just keeps going until you finally swap it out.

Totally get what you mean about the wrist. A sharp tool is a safety tool. I used to fight with a cheap cordless drill every day. Upgrading to a better one felt like getting a new arm. It just does the work without the fight. Makes the whole job less tiring.
