Snapped my boning knife blade on a pork shoulder at 6 AM, learned to stop torquing the tip through the joint
I was breaking down a 90 lb pork shoulder at my shop in Boise and trying to rush the seam around the ball joint, so I forced the tip sideways instead of following the socket, snapped 2 inches off my 6 inch boning knife, grabbed my backup and finished the cut in half the time by just finding the seam gap with my finger first, but now I'm wondering if anyone here keeps a cheap beater knife just for joint work so they stop wrecking their good ones?
