Shoutout to that new farm shop in Springfield that only sells whole carcasses to the public

I visited last week and it got me thinking, is this direct-to-consumer whole animal model a smart way to educate people about butchery, or does it just create more work for us when folks bring in poorly broken-down cuts asking for help?

It's a cool idea but most people don't have the space or tools for a whole carcass.

Zara's got a point about the space. My last apartment's kitchen was basically a closet with a sink, so a side of beef would have had to share the shower. You'd need a band saw in the living room and a chest freezer on the balcony just to make it work.
