Just realized the old timer at the shop on 5th was right about cutting against the grain
Was trimming a top sirloin last Tuesday and complaining to the guy next to me about how my slices kept tearing, and he just pointed at my board and said I was going with the grain on the wrong muscle. I brushed it off at first because I have been cutting meat for 11 years, but I tried it his way on the next one and the difference was night and day. Cost me about 20 minutes of redoing a 15 pound batch, but the texture came out way better and I have been doing it wrong this whole time on that specific cut. Anybody else have a moment like this where someone with half your experience points out something basic you missed?
