Just realized I've sharpened my boning knife over 500 times in the last year...

That number hit me while I was cleaning up tonight, and it made me think about how much muscle memory and wear that single tool takes on.

Five hundred times is more than once a day. That knife must be half its original size by now.

What do you even cut that much?
