Found a better way to trim silverskin from tenderloin
Used a boning knife with a sharper angle, and it came off in one piece. Saved me so much time during prep.

Honestly the knife type matters less than keeping it sharp. A dull boning knife is just a hassle, @emma_ramirez. I get clean strips off with a sharp chef's knife just fine.

You ever mess up trimming a different cut because the knife was wrong? I once tried to trim a brisket with a paring knife... had to stop and sharpen my chef's knife halfway through. Still ended up with little fat pieces stuck all over the meat.
