24 years cutting beef before I caught my method was ruining primal yields

Was watching a new guy break down a ribeye roll and noticed he got 3 extra steaks from the same weight. Turned out my angle on the spinalis cut was wrong the whole time, been leaving money on the table every single carcass. Anyone else have that moment where a fresh set of eyes showed you something basic you'd been messing up?

Man, that's a tough one to hear after so long in the game. Twenty four years and something that small makes a big difference over time. It's frustrating when you realize a simple habit was costing you that much waste all along. Really feel for you on that one, those little things add up in ways we don't notice until someone points it out. Hope you can adjust the angle now and save some more steaks per roll going forward.
