Question about stretching a single chicken breast for three meals
I was cooking dinner at home last Tuesday and realized I only had one chicken breast left. I needed to feed myself for three nights on a tight budget. I cut it into very small pieces and cooked it with a big bag of frozen vegetables and a lot of rice. It made enough for three full plates. The total cost for the whole meal plan was under $8. Has anyone else tried something like this with a different meat?

Oh man, lentils are a total game changer for that. I did basically the same thing last week with a single pork chop. Chopped it super fine and cooked it into a huge pot of beans and rice with some cheap salsa. It felt like a real meal every night and cost maybe ten bucks total.

Ever think about using lentils to bulk it up? They're super cheap and add a lot of protein so the chicken goes even further.

What kind of lentils work best for that? I tried brown ones once and they turned to mush, which kinda ruined the texture. I'm looking for something that holds its shape.
