People keep adding water to ground beef to stretch it, and I finally figured out why that's a bad idea
Last month I watched a friend dump a quarter cup of water into a pound of 80/20 beef for tacos and it turned into gray mush that wouldn't brown, so now I just add a splash of oil and cook on medium-high heat instead, has anyone else noticed how much texture you lose with the water trick?

Hang on, a quarter cup of water? That's insane, that's basically making wet meat soup not taco filling. No wonder it turned into gray mush, you can't sear meat when it's swimming in water like that.

Whoa, I always thought the water trick was smart but yeah, you're right.
